Mahón is one of our favorites, an exceptional cow's milk cheese from the Island of Menorca. This "añejo" aged version has a bright sharpness, a pleasant nutty flavor and a hard texture much like a fine Parmigiano.
To serve, cut thin slices, then sprinkle with olive oil, black pepper and tarragon to enjoy it like a Menorcan! Or add to your favorite recipes in place of parmesan or pecorino romano cheese - you will love the added complexity of flavor.
Our traditional Mahón cheese is hand-formed into a "cushion" shape by wrapping the cheese in a cotton cloth. As it ages, it is hand rubbed with extra virgin olive oil and mild paprika, lending it a warm rust colored rind. After a year, this artisan raw milk cheese has a flaky texture, with an intense sharp flavor.
Awarded the protected status of D.O.P. Mahón, recognizing it as a truly traditional Mahón style cheese.
