This small batch mesa salami combines rich Iberico pork with the floral notes of Mexican oregano and a touch of white wine. The pork comes from purebred Iberico pigs pasture-raised on a ranch in the Texas Hill Country. There they live outside eating acorns, mesquite beans and prickly pear fruit.

This artisanal salami is subtly seasoned with an inviting aroma. Ideal for casual gatherings, it complements cheeses, olives and crackers beautifully. Perfect for charcuterie boards, this salami adds a sophisticated and versatile note to any spread.

Texas Iberico® pigs flourish on the natural landscape of the Texas Hill Country, grazing on mesquite beans, acorns and prickly pear. Raised outdoors for over 18 months—three times longer than standard commercial pigs—these pigs yield richly marbled, flavorful pork of unparalleled quality.
